Hold, overround, and fair odds
A two-sided market should add up to 100 percent. When it adds up to more, the extra is the book's margin. The overround is how far past 100 the prices reach; the hold is the share of stakes the book keeps on a balanced book. A standard -110 / -110 line overrounds about 4.76 percent and holds about 4.55 percent. Strip that margin out and you get the fair odds, the price with no juice, which is the number worth comparing against your own read.
